Blueberry Pancake


Prep Time: 10m Cooking Time: 15m Total Time: 40-45m

Ingredients:

  • 1 ¼ cups all-purpose flour

  • ½ teaspoon salt

  • 1 tablespoon baking powder

  • 1 ¼ teaspoons white sugar

  • 1 egg

  • 1 cup milk

  • ½ tablespoon melted butter

  • ½ cup fresh or frozen blueberries

  • ¼ cup fresh or frozen blueberries

  • 1 teaspoon vanilla extract (optional)

  • Maple syrup (optional)

Instructions:

1. In a bowl, sift together flour, salt, baking powder and sugar.

2. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture.

3. Add vanilla extract, butter and blueberries into the mixture then mix. Set aside.

4. Heat griddle or frying pan over medium heat. Grease the griddle or frying pan. Pour or scoop the batter onto the griddle about ¼ cups for each pancake. Sprinkle 1 tablespoon or fewer blueberries atop each pancake while cooking before batter turns solid.

5. Cook the cake until golden brown on the bottom, about 2 minutes. Flip them over and cook until other side is golden brown, another 2 minutes.

6. Serve hot. You can add butter or maple syrup on pancake.

Tips: Sprinkle some blueberries while cooking will make it looks better as the blueberries will stand out of the pancake and not be covered by the batter when it solidifies.
